2 bags spinach, rinsed
1 jar artichokes, drained and chopped
1 red onion, chopped
1 clove garlic
1 jar sun dried tomatoes, sliced into pieces
1 roasted red pepper
c. feta cheese or gorgonzola cheese
1# fresh or frozen tortellini

Dressing
c. olive oil
2 T. red wine vinegar
1 lemon
or
9 T. balsamic vinegar
3 cloves garlic, minced
1- tsp. oregano
1- T. tomato paste
c. olive oil

Directions:
Directions:
Boil tortellini, drain. Chopped vegetables, rinse spinach. For the dressing use whichever one you want and mix ingredients together until well blended. Place spinach, tortellini in large bowl, add vegetables and toss with dressing. Top with feta or gorgonzola cheese.
