4 Salmon filets
4 phyllo pastry
1 Tab. lemon juice
2 shallots
2 eggs yolks beaten
1 cup whipping cream
1 cup sparkling champagne

Directions:
Directions:
Take Phylo leaves and put salmon filets in them. Sprinkle with drops of lemon juice and small pats of butter. Saute in oven at 400 degrees for 18 minutes ONLY!

Sauce:
Saute 2 chopped shallots. Beat egg yolks and cream together. heat carefully and add shallots. Whisk until slightly thickened. Add champagne (room temp). Serve warm over champagne.

Champage added at the very last minute prior to serving. I pour a little sauce on the plate; then the salmon and then the sauce on the top.
