1½ pounds boneless sirloin or chicken breasts
1 tablespoon vegetable oil
1 teaspoon cayenne pepper
1 teaspoon salt and pepper
¾ cup salsa
1 tablespoon garlic, chopped
⅓ cup ketchup
1 teaspoon Tabasco
1 - 2 tablespoon packed brown sugar
1 tablespoon mustard
3 med. Assorted peppers, sliced
1 large Onion, sliced
lettuce, shredded - optional
tomato, chopped - optional
sour cream - optional

Rub cayenne pepper and salt and pepper onto meat. Cut meat into strips. Heat 12-
inch skillet or wok over high heat. Add oil, rotate skillet to coat side of pan. Add meat, tabasco, garlic and stir fry 5 to 7 minutes or until golden brown. Stir in salsa, ketchup, mustard and brown sugar. Cook and stir 1 to 2 minutes or until sauce in hot and thickening. Add desired vegies and cook vegies until tender. Serve on tortillas with optional ingredients.

* Tried adding pineapple. Was really good! Don't be scared to use the juice as well. Makes it very tasty!
**A friend of mine skips the tortillas and crunches up corn chips into a bowl of fajitas and adds sour cream. This is similar to a taco salad. It tastes good too.
