• 3 cups Wheat Flour:
• 1 cup Besan (Chickpeas flour)
• 1 cup Methi (Fenugreek) leaves
• 1 cup Plain Yogurt:
• ½ teaspoon Turmeric powder
• 1 teaspoon Cumin seeds
• As preferred for taste Salt
• As preferred for taste Chili powder

Directions:
1. Select a bowl (similar to the one used for mixing Salads) and add yogurt, salt, chilli powder, methi leaves and cumin seeds. Mix well and add Besan flour. Mix again. Add wheat flour slowly and knead the dough with hands till all the dry flour is well mixed. Add warm water if needed to make the dough. At this stage, the dough should feel thick and soft, (like Pizza dough). Let the dough sit for 20min.
2. Cut golf ball size portions from the dough and roll these using a rolling pin on a flat base. Convert all the dough balls into flat ‘paratha’. Spread them on a table such that the flat breads do not stick to each other.
3. Take a frying pan and place it on the stove. Spray oil slightly on the pan. After the pan is hot, place each paratha on the pan and cook both sides till they turn golden brown.
4. Store the cooked parathas in a sealed container.

Parathas can be served hot, warm or even at regular temperature. Spicy yogurt, a Pickle or chutney can be used as a side dip for Methi paratha. Once cooked these parathas stay fresh when stored in refrigerator for up to a week.
