1 pound ground beef
½ cup onion, chopped
1 pkg. enchilada sauce mix
1 can olives
1 can tomato sauce
½ cup mushrooms - optional
1½ cup shredded cheese - Mexican cheese best
1 pkg. Flour Tortillas for Soft Tacos

Directions:
Directions:
Heat oven to 400°F. Brown ground beef and onion over medium-high heat until thoroughly cooked; drain. make enchilada sauce per directions. Cover front and back of tortillas. Spoon meat filling onto tortillas, sprinkle with cheese and spoon enchilada sauce over combination. Roll up and place seam-side down in lightly greased 13x9x2
baking dish. Pour remaining enchilada sauce over top; sprinkle with remaining ½ cup cheese. Bake at 400°F for 15 to 20 minutes.
