1 Pound of Whole Grain Pasta of your choice
1 to 2 cups broccoli florets …. Even Cauliflower would work!
16 oz jar of salsa - pick your own heat. I use mild.
1 cup organic corn

Sauce:
3 cups of plant "milk" of your choice
1 cup veggie broth
¼ cup whole wheat flour (or other thickener
¼ ChickUN Seasoning

ChickUN - Soy Curls (Butlers Soy Curls):
1 cup soy curls - I break them into smaller pieces if they are too big
¼ ChickUN Seasoning
Boiling water to cover so they rehydrate

Directions:
Directions:
Boil your whole grain pasta, following directions on the box.
5 minutes before the pasta is finished cooking, add the broccoli to the same water.
Strain the pasta/broccoli, but do not rinse so the sauce will stick.

Meanwhile, Make the Sauce in a medium pan using the "milk", veggie broth, flour and ChickUN Seasoning.
Whisk it so the lumps come out.
Bring this to a rolling boil and shut it off.

Meanwhile, put your Soy Curls and chickUN seasoning in a bowl covering with boiling water to rehydrate. Mix the seasoning in well and let it sit while you are finishing the recipe.

Into a large casserole dish add the salsa, corn and the finished pasta, sauce and soy curls. Mix this well.

Sprinkle some ParmesUN "Cheese" on top.
Add the casserole glass top

Bake for 20 minutes in a 350 oven
