1 bunch swiss chard
2 Tbsp coconut oil
1 tsp black mustard seeds (or 1 tsp prepared mustard)
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp salt
1/2 c. plain greek yogurt
1 small onion chopped
1/2 lemon, juiced
1 c. chopped paneer (optional)

Directions:

Wash swiss chard, remove stems and chop in 1" pieces
Heat oil in pan on medium. Sauté onions and paneer with salt. Cook until onions are soft and paneer has a light brown crust.
Add spices, cook 30 seconds.
Add chard. Cover with lid and cook 3-5 minutes, until wilted.
Uncover and turn off heat. Stir in yogurt and lemon juice.

I wanted to try cooking with new ingredients and realized I'd never tried swiss chard when I came across this recipe. It is delicious! Adding the paneer made it a meal, rather than a side. Inspired by Sonali, an amazing chef and fellow RWS mom while Kayla was in second grade.
