2 pork loin chops
2 cloves garlic
chopped vegetable of choice - zucchini, squash, spinach, kale all work nicely
2 or 3 chopped tomatoes or 1/2 cup sun dried tomatoes
1 cup chicken broth
2 handfuls of penne pasta
1/4 brick of cream cheese (about 2 ounces)
a good sprinkling of Parmesan cheese

Cut pork into bite sized pieces. Cook over medium high heat in a bit of olive oil until nearly done.
Add tomatoes and garlic and cook until the tomatoes start to break down.
Add pasta and chicken broth and cover. Simmer until pasta is al dente.
Add cream cheese and Parmesan and stir to incorporate.
Add vegetable(s) and cover. Simmer until vegetables reach your desired doneness.
