1 tablespoon chili powder
˝ teaspoon salt
4 chicken Breasts cut into bite sized pieces
1 cup chopped onion
2 tablespoon oil divided
2 medium bell peppers seeded and cut into strips
1 red or yellow pepper seeded and cut into strips
1 package frozen corn about 10 oz.
Hot sauce optional

Directions:

Combine chili powder and salt in a bowl and add chicken to coat.
It will not coat the all the chicken.
In a medium skillet heat 1 tablespoon oil.
Place chicken in the pan and cook until no longer pink. (medium/high heat).
Remove to a dish and add the other tablespoon oil and begin cooking the onion until crisp tender and add the peppers doing the same.
Pour corn over mixture and heat through stirring occasionally and once heated add the chicken back in and let heat several minutes before serving.
Season with salt and pepper.
