1 med. sweet potato, peeled and cut into 1/2 inch chunks
1 C reduced-sodium chicken broth
1/2 C fresh or frozen corn
1/2 small onion, chopped
2 garlic cloves, minced
1 1/3 C fresh spinach, torn
1/2 C flaked smoked salmon filets
1 tsp. pickled jalapeno slices, chopped
1 Tbsp. cornstarch
1/2 C 2% milk
1 Tbsp minced fresh cilantro
Dash pepper

Directions:
Directions:
In a large saucepan, combine the first five ingredients; bring to a boil. Reduce heat and simmer, covered, 8-10 mins. or until potato is tender.

Stir in spinach, salmon and jalapeno; cook 1-2 mins. or until spinach is wilted. In a small bowl, mix cornstarch and milk until smooth. Stir into soup. Bring to a boil; cook and stir 2 mins. or until thickened. Stir in cilantro and pepper.

After Bob's heart attack in 2014, we tried to eat better and cook better! We used so many recipes out of Cooking Light magazine...and this is one that we still go back to every fall and winter! During a scary time in our life, this recipe brought us great comfort!
