3 eggs
2/3 cup pumpkin
1 cup sugar
3/4 cup plain flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt

Filling:
8 oz cream cheese
1 cup confectioners sugar
1 tsp vanilla
2 tbsp butter

Directions:
Directions:
Preheat oven to 350 degrees. In a bowl, mix together eggs, pumpkin, and sugar. Beat for 5 minutes. Add flour, baking soda, cinnamon, and salt. Blend well. Line cookie sheet with waxed paper. Spread dough with spatula. Bake 15 minutes.Cool for 5 minutes; then turn out on a towel and peel the waxed paper off. Roll up in the towel and let cool.

For filling:
Mix together cream cheese, confectioners sugar, 1 tsp vanilla, 2 tbsp butter. Blend well.

Once the roll is cooled down, unroll and fill with filling. Roll back up without the towel. Shake a small amount of confectioner sugar and wrap up with plastic wrap.
