4-5 cups green beans (ends removed and cut into 1/2 pieces)
salt and pepper
1 red pepper (diced)
1/4 cup parmesan cheese (shredded)
1/2 cup cheddar cheese (shredded)
1 can mushroom soup

Topping:

2 tbsp melted butter
1/2 cup GF breadcrumbs
1/2 cup cheddar cheese (shredded)

Directions:

1. Preheat oven to 350ºF.

2. Bring a large pot of water to a boil and cook green beans for 6-7 minutes until tender and drain well.

3. Combine green beans, red pepper, cheddar cheese and parmesan cheese. Toss with mushroom soup and place in 2 qt casserole dish.

4. Bake for 20 minutes. Stir and sprinkle with topping and then bake for an additional 15 minutes.
