Split Pea Soup Recipe

2 Tbsp unsalted butter
1 med. onion, diced
3 stalks celery, diced
6 med. carrots, peeled and sliced
2 bay leaves
1 Tbsp thyme
2 C dried split peas
6 C chicken or vegetable broth
2 smoked ham hocks or ham bones
1/4 tsp. paprika, optional
Salt and pepper to taste

Melt the butter in large, heavy pot over med. heat. Add onion, celery and carrots and cook until the onions are soft. Add the bay leaves, thyme and season with salt and pepper. Add the split peas and stir to combine. Add the broth and the ham hock/ham bone and smoked paprika and bring to a boil.

Turn heat down to low, cover and simmer for one hour. The soup should be creamy and soft. If it seems too thick, add more water or broth. The soup is done in about 90 mins to 2 hours...when the peas are soft.

Remove the bone and let cool slightly. Remove the meat from the bones, shred and add into soup. Remove bay leaves before serving.

I will remember 2020 as a year when America, friends, family were divided. I will remember talking to some of my relatives and deciding that I was going to just listen and not try to convince them to change their minds. I did that with great difficulty. My split pea soup is a nod to the divisive time of 2020.
