Crock Pot White Chicken Chili Recipe

Ingredients: 5 cans Great Northern beans 1 C cooked chicken, cut into small cubes or shredded 2 C chicken broth 1 small can green chilies 2 tsp. chili powder 2 T chicken seasoning (I usually use the brand, Spade L Ranch, but it's hard to find. Chicken bouillon works, or you can leave it out completely.) small tub of sour cream 2-3 C shredded cheese (You can use cheddar, pepper jack, Colby-jack, or any combination of cheeses)

Directions:Drain 3 cans of the beans and put them in the crockpot. Empty the other 2 cans into a bowl, with their liquid, and mash them with a fork. Add them to the crockpot. Add the chicken, chicken broth, chiles, chili powder, and seasoning. Heat contents on low until hot, or until you're ready to eat.
Just before serving, stir in the sour cream and shredded cheese. Stir until cheese is melted. Serve hot.
I use this recipe as a base and add additional ingredients to the crockpot. My additional ingredients vary depending on what's in my fridge at the time. Typical add-ons include: onions (raw or cooked), jalapeno peppers (fresh or pickled), salsa, fresh cilantro, diced, tomatoes, extra chicken, a can of black beans...and anything else that looks like a good addition. |
