2 lb. ground meat (lamb preferred. Can use beef)
1 lb. sausage
2-4 tbsp. olive oil
salt
pepper
rosemary (to taste)
2 garlic cloves
2 lb. ricotta cheese
2 eggs
8 c. pasta sauce
1 pkg. lasagna noodles
6 c. parmesan cheese
6 c. mozzarella cheese
1 medium yellow onion
mushrooms sliced thinly
10 oz. frozen spinach

Directions:
Directions:
Use a large pan to sauté olive oil, garlic, mushrooms, onion and spinach. Add in meat and cook until browned. Add 4 c. pasta sauce and simmer. Add 1 c. parmesan cheese. Season with salt, pepper and rosemary.
In a mixing bowl, mix ricotta cheese, 2 c. parmesan, 2 lightly beaten eggs, salt, pepper, and remainder of garlic. Mix until eggs are completely incorporated. The rest of the pasta sauce is for the bottom and top layers.
Prepare pasta according to package.
Preheat oven to 350º. Spread a layer of tomato sauce on the bottom of a DEEP 9X13 lasagna baking dish. The sauce keeps the pasta from sticking to the dish. Next layer in the pasta, followed by meat mixture, ricotta layer, sauce, and repeat as needed. Top the lasagna with a good portion of tomato sauce and fully cover with grated parmesan and mozzarella shredded cheese.
Bake covered with foil for 1 hour. Spray the foil with baking spray to keep the cheese from sticking. Let stand about 15 minutes before serving.
