For crust: 1/2 cup each brown and white sugar, 1 stick butter, softened, 1 egg, 1/8 cup hot water, 2.5 cups all purpose flour, 1 tsp. vanilla extract, 1/2 tsp. baking soda.
For sauce: 8 oz. softened cream cheese (not no fat), 1/2 cup (white) sugar, 1 tsp. vanilla extract.
Desired fruit "toppings" such as mandarin orange segments, halved grapes, kiwi slices, strawberries/blueberries/raspberries, bananas, peaches, cherries, etc.

1) Preheat oven to 350F. For the crust, cream sugars and softened butter. Add egg, water and vanilla. Mix till combined. Add baking soda to flour, and add flour to the wet ingredients a cup or so at a time just until combined. Don't over mix or it will toughen the dough. I use my Kitchenaid stand mixer because the dough will be stiff. Chill dough for an hour or 2 to make it easier to roll out. ***The dough for the crust may be frozen before or after baking if desired.
2) Grease a cookie sheet or pizza pan or line with parchment. Roll out dough with powdered sugar (instead of flour) into a circle about 3/8" thick. Bake 15 minutes. Depending on the size and thickness of dough, the type of pan you use, and your oven, you will need to watch it to determine the actual time needed to brown the edges and give the center a lightly golden, dry, crackled appearance. Let cool completely.
3) Beat "sauce" ingredients until smooth and creamy. Spread over cooled crust, leaving an edge of crust visible.
4) Top with sliced fruit. It presents best if the fruit is close together and in a decorative pattern, but you can put toppings on "confetti" style if you're in a hurry ;)
Cover loosely and chill until ready to serve. Cover and refrigerate leftovers.
