1 lb of ground beef
1/2 cup of boxed instant rice
2 cans of tomato soup
2 cans of cream of mushroom soup
4 bell peppers (preferably yellow orange or red)

Directions:
Directions:
First clean, cut, and core the peppers. Place the cored peppers in your crockpot sitting upright. Next, make your filling, mix your uncooked ground meat with your rice until evenly mixed. Stuff your peppers with the mixture. With the remaining filling, make small meatballs and place in your crockpot in between peppers. Lastly, mix tomato soup and mushroom soup in a bowl until thoroughly mixed. Pour your mixture over your peppers until completely covered. Add a small amount of water to the bottom of the crockpot to prevent burning. Cook for 2-3 hours on high, then lower temperature to low and cook for another 3-4 hours.

Taken from mom, but a wonderful staple in our household. Tastes great on a cold day served with some mashed potatoes!
