1 1/2 cups oil
1 1/2 cups sugar
2 eggs
3 tbsp cocoa
2 oz red food coloring
1 cup buttermilk
1 tsp vanilla
1 tsp salt
1 tsp baking soda
1 tsp vinegar
2 1/2 cups flour

Icing:
8 oz cream cheese
1 cup nuts (optional)
1 box powdered sugar
1 cup coconut
1 stick butter

Directions:
Directions:
Cream together oil, sugar and eggs. Sift flour, salt and baking soda. Add cocoa, buttermilk, food coloring, and vinegar to the oil, sugar and eggs. Mix sifted ingredients to the mixture. Mix all ingredients together well. Bake in a 350 degree oven for 25 to 35 minutes.
Mix all icing ingredients together and spread on cake once the cake cools.
