1 ½ c. White Sugar
½ c. Vegetable Oil
2 tsp. Vanilla
2 c. Apples, peeled and diced
2 c. Flour
1 ½ tsp. Salt
1 tsp. Baking Powder
1 tsp. Baking Soda
1 tsp. Cinnamon

Directions:

Preheat oven to 350º Grease loaf pan well or use parchment paper.

Beat eggs, sugar, oil and vanilla in mixing bowl: add apples.

Mix flour, salt, baking powder and cinnamon in a separate bowl; add to apple mixture and stir just until evenly combined into a thick batter. Pour batter into a prepared loaf pan.

Bake for 45 minutes. Cover loaf with aluminum foil and continue baking until a toothpick inserted into the center comes out clean, about 15 more minutes.

Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

If you're a nut fan add 1/2cup of your favorite nut to mixture.

I used Honeycrisp apples. Gala and Fuji would work well too.
