FOR THE CAKE:
1 1/2 cups boiling water
1 cup oats (quick or old fashioned)
1 stick butter, melted
1 cup brown sugar
1 cup white sugar
2 eggs
1 1/2 cup flour
1 teaspoon baking soda
1 teaspoon nutmeg
1/2 teaspoon salt
1 teaspoon cinnamon

FOR THE CARAMEL TOPPING:
3/4 cup packed brown sugar
6 tablespoons butter
1 cup flaked coconut
1/2 cup chopped nuts

Cake:
Pour boiling water over oats and butter and let stand 20 minutes. Cream white and brown sugars and eggs together well. Add the remaining cake ingredients and mix well. Add the oatmeal mixture last. Mix. Bake at 350 degrees for 30 to 35 minutes in a rectangular baking dish. Top with Caramel Topping.

Caramel Topping:
Combine brown sugar, butter and milk in a 4-cup glass measure. Microwave on high, uncovered, for 3 to 4 minutes or until bubbly and thickened, stirring several times. Stir in coconut and nuts. Spread on warm or cooled cake.
