2¾ cups flour
½ teaspoon salt
1 teaspoon ground ginger
⅔ cup molasses
1 egg
3 teaspoons baking powder
1 teaspoon cinnamon ground
⅛ teaspoon ground cloves
⅓ cup brown sugar
½ cup oil

Mix ingredients thoroughly and chill at least 1 hour. Pat dough on a 15-inch or 17-inch greased cookie sheet.

17-inch cookie sheet makes a taller house with a higher peaked roof.
15-inch cookie sheet is more like a cottage.

Measure and mark the dough with a sharp knife BEFORE baking. Cut house to the measurements indicated on diagram.**

Bake at 300º for 35-45 minutes. Watch that it doesn't burn. *Tip: If you put a piece of foil on the bottom rack beneath the cookie sheet on the middle rack, gingerbread corners won't burn.

IMMEDIATELY cut out gingerbread house. Remember to cut the chimney and the door. If you try to cut this when it is cool, it will possibly break.

After taking gingerbread from oven-cut and let sit. While still warm, carefully lift each piece to make sure it's not sticking to pan. Gingerbread must be dry & hard for assembly.

Bake at least 1 day before decorating and keep in a warm, dry place.
 

Royal Icing

6 egg whites at room temperature
2 pounds (1 bag) sifted powdered sugar
1 teaspoon cream of tartar

Combine and beat at high speed about 7-10 minutes. It MUST be stiff. A regular hand mixer will not make this stiff enough. Use a stand mixer such as KitchenAid, Bosch, Cuisinart, etc. Use cookie paddles or sturdy whisk attachments.

Do not store icing in plastic. Make this just before you decorate. Cover tightly when not in use. Can be stored in the fridge or room temperature when it is tightly covered.

Cardboard for foundation, cut a box or buy a cake round 12" or 14"
Holiday Candy, a variety of sizes and colors
Pretzels or candy for a fence
Candy people or animals like Peeps or foil wrapped chocolate figures
Turntable/Lazy Susan (as for spices) for ease in turning
6 Candy Canes or old fashioned hard candy sticks (like See's), for stabilizing corners of house and peak of roof

It's good to decorate in a group setting and share candy for a good variety. Hard candies such as lifesavers tend to take moisture and bleed their colors. M&Ms, Mike & Ike's, Smarties, Necco wafers, gum drops, etc. work well.

The Dahl Aunties (Mindee, Jacque, Wendy, Stacie, Christy & Collette) were taught how to make gingerbread from scratch with this recipe shared by our dear friend, Pat Beckstead, aka Grandma Pat. We all baked our gingerbread and cut it to size then joined Pat for tips on assembling and decorating our fun holiday gingerbread houses. It was a super fun 'Sisters Night Out' that brought us closer together.
