4 skinless, boneless chicken breast halves
1 10 ounce package frozen chopped spinach, thawed and squeezed dry
1 cup crumbled Blue Cheese
1/8 teaspoon ground black pepper
1/4 teaspoon salt
8 slices bacon (optional)

Directions:
Directions:
If using bacon, cook until crisp. Drain and set aside.
Preheat oven to 350 degrees. In a medium bowl, stir together the spinach and blue cheese. Crumble in bacon and stir to distribute.

Lay the chicken breast halves open on a clean surface and distribute the spinach mixture evenly on center of chicken. Fold the chicken over the filling and secure with toothpicks. Salt and pepper tops of chicken

Bake for 30 minutes in preheated oven until chicken juices run clear and filling is hot.
