3 tbsp. butter
1½ c. chopped celery
1 c. shredded carrots
¼ c. sliced green onion
2 10½ oz. can cream of potato
1 14 oz. chicken broth
½ c. water
2 tbsp. snipped parsley
few drops pepper sauce
2 c. shredded cheddar or colby cheese
1 13 oz. can (1¾ c. evaporated milk)

Directions:
In large saucepan melt butter- cook celery, carrot, and green onion in butter till tender, but not brown. Add potato soup, chicken broth, water, parsley, and hot sauce. Cook- stir till boiling, then reduce heat. Cover and simmer for 20-25 minutes. Stir in cheese and milk. Heat through-DO NOT BOIL. Sprinkle with additional green onions if desired.
