1TBSP olive oil
1/2 cup shredded carrots
1/4 cup diced onion
1/4 cup chopped celery
1 tsp minced garlic
2 TBSP cornstarch
4 cups chicken broth
4 cups water
1 package (16 to 18 oz) potato gnocchi
salt & pepper to taste
1/8 tsp ground nutmeg
1 cup fat free half and half
2 cups cooked chopped chicken breast
2 cups fresh chopped spinach

Add olive oil to large soup pot on medium heat. Add carrots, onion, celery cook until vegs start to soften. Add garlic, cook another minute. Wisk together cornstarch and chicken broth, add to pot along with the water. Bring to a boil and add Gnocchi. Reduce the heat to a gentle simmer and stir in salt, pepper and nutmeg. Simmer for 10 mintues. Add the half and half, chicken and spinach and simmer for 10 more minutes until thickens.
