4 Cold, Boiled Potatoes
5 Hard Boiled Eggs, Peeled
Salt
Pepper
3 c. Milk
4T Butter
4T Flour
20 Ritz Crackers
2T Butter, Melted

Directions:
Directions:
Preheat oven to 350. Slice potatoes and eggs into 1/4 inch slices. Grease a 9x9 baking dish and add a layer of potatoes. Sprinkle the potatoes with salt and pepper and add a layer of eggs. Repeat until all are used. Set aside.
In a pan on the stove melt 4 T butter and then add the flour. Stir until just starting to brown. Add milk slowly and continually stir until thickened and no lumps remain. Season to taste with salt and pepper then pour over the potato and egg layers.
In a separate bowl, break the crackers down into crumbs and pour in remaining 2T of melted butter and mix until combined. Press crumb mixture on top of white sauce and bake until browned and bubbling, about 45 minutes.
