Catfish- Mix together 1 cup of flour and 1 cup of cornmeal, add salt and pepper.

Roll fish in flour mixture. Set electric skillet to 375º and melt butter when ready fry until brown on one side. Flip and fry the other side.

I have so many good memories about catfishing. Going out in the boat with Dad as a kid and pulling nets. Sometimes those trips were a bit sketchy. Sitting on the Missouri River bank with Mom. One time, I remember sprinting to the river with Sierra in my arms as a catfish (a whopper I'm sure) took our pole into the river. Most of all taking family and friends to the Belle Fouche River and fishing with kids. One day at the Belle when the girls were pulling fish out faster than I could get them off and rebait the hooks. The perfect end to any of these days was frying up the fish and enjoying them for supper.
