3 uncooked skinless, boneless chicken breasts, or 1 whole pre-cooked chicken from grocery deli
3 hardboiled eggs
mayonnaise
white balsamic vinegar
salt
pepper
garlic powder
sugar
almonds, slivered or sliced
celery
onion (optional)
parsley
basil

Directions:
Directions:
Boil eggs and cool while chopping celery and onion in a food processor. Chop chicken in a food processor after boiling for 10 minutes (until no longer pink), or removing meat from a pre-cooked chicken (use both dark and white).

Chop egg whites and sprinkle with salt and pepper. Mix egg yokes with mayo to make a creamy base. Add ½ tsp white balsamic vinegar and ¼ tsp sugar (taste to see if it is well balanced and a little tart). To the creamed mixture, add more salt and pepper, along with the basil, parsley and garlic powder to your taste.

Mix the meat, celery, onion, egg whites and almonds into the creamed mixture. Taste it, and add more salt, pepper, or herbs as needed, as well as more mayo if it looks dry.

Refrigerate.

I do not use a recipe, so go by your own taste, as needed. This is great with lettuce and tomato on a croissant.
