Vegetable oil spray
2 C 8oz. finely shredded cheddar cheese
½ C thinly sliced, finely chopped smoked ham
¾ C mayonnaise
½ C finely chopped onion
4-5 bacon slices, cooked and finely crumbled
2-3 Tsp Dijon mustard
¼ Tsp kosher salt
1 16.3 oz. tube (8 biscuits) Pillsbury grand flaky layer biscuits
Freshly ground black pepper

Preheat oven to 450º

Spray a mini muffin pan with oil spray, even if using a non stick pan.

Toss together the cheese, ham, mayonnaise, onion, bacon, mustard and salt in a medium bowl.

Gently separate the individual biscuits. Cut each biscuit into quarters. Roll each biscuit quarter into a 1" ball and press the dough into the bottom and up the sides of the muffing cups.

Fill each cut with ½ Tsp of cheese mix. Take care not to overfill them.

Sprinkle with a grind of pepper on top of each if desired.

Bake 5-7 minutes, until golden brown and the cheese is melted.

Let stand for 2 minutes before removing from the pan.

Serve warm.
