5 oz/150g of dried black-eyed beans
17 oz/500g of rice
½ onion
3 Tbsp oil
Salt

Serve with red pepper powder and oil, or fried tomatos and peppers.

Directions:
Remove unwanted particles from bean, wash and soak beans overnight to reduce the cooking time. Cover pot and boil beans in a large saucepan with enough water until half cooked (about 20 minutes) . Wash rice, drain water and add it to the cooking bean with the onion and oil. Add salt and stir, cover, and leave to cook whiles frequently checking to ensure desired texture and water is absorbed.
