1 3Lb broiler-fryer
2 cups water
1 cup chopped celery and tops
1 small onion, sliced
2 teaspoons salt
1 teaspoon leaf thyme, crumbled
1/4 teaspoon pepper
1/3 cup butter or margarine
` large leek, washed and chopped
13 cup flour
1 cup light cream
1 teaspoon salt
Sesame Seed Crust (recipe follows)

This serves 8. Combine broiler-fryer, water, celery, onion, 2 teaspoons salt, thyme and pepper in a kettle. Heat to boiling; lower heat; cover kettle Simmer 45 minutes or until chicken is tender. Remove Chicken from broth; reserve broth. Remove chicken from bones; cut into time pieces. Melt butter or margarine in a large saucepan. Saute' leek or onion until soft, but not brown. Stir into saucepan with cream and 1 teaspoon salt. Sprinkle flour over and cook, stirring constantly, 3 minutes. Remove saucepan from heat. Strain reserved chicken broth into a 4 cup measure and add water, if necessary to make 2 1/2 cups. Stir into saucepan with cream and the 1 teaspoon salt. Cook, stirring constantly, until mixture thickens and bubbles 3 minutes. Add chicken and mix well. Divide mixture among eight 10 ounce freezer-to-oven baking dishes or disposable aluminum pans. Top with Sesame Seed Crust. Cover each dish with heavy duty aluminum foil. Label, date and freeze. TO SERVE: Remove chicken pies from freezer and remove foil; place on a cookie sheet and bake in hot oven 40 minutes or until pastry is golden and mixture is bubbly-hot.
SESAME SEED CRUST: Combine 2 cups biscuit mix with 1 teaspoon sesame seeds in a medium-size bowl. Stir in 1/2 cup water until mixture forms a soft dough. Turn ??? this is where the recipe ended! so the rest is a guess...

[out onto floured surface and roll out to pie crust thickness. Cut to size of dishes and place on top of baking dishes]
