1¼ c. flour
1 tsp. baking powder
1 tsp. cinnamon
½ tsp. ground ginger
¼ tsp. nutmeg
½ tsp. salt
3 large eggs
1 c. sugar
1 c. vegetable oil
2 tsp. vanilla
2 c. grated carrots
½ c. golden raisins
½ c. toasted pecans

Directions:

Preheat oven to 350º. Grease a 9x5 loaf pan and line with parchment paper. In a medium bowl whisk flour, baking powder, cinnamon, ginger, nutmeg, and salt.
In a large bowl whisk eggs and sugar until light and fluffy. While whisking, slowly pour in oil until well combined, then add vanilla. Stir dry ingredients into wet until just combined. Fold in carrots, raisins, and pecans. Pour batter into prepared pan, bake about 1 hour and 10 minutes until toothpick comes out clean. Let cool slightly, then turn out on cooling rack. Frost with cream cheese frosting*.
