8 small to medium sized red or Yukon gold potatoes
¼ cup olive oil or real butter
1 bulb chopped garlic
½ shredded parmesan cheese
¼ cup chopped Italian parsley or chives
salt and pepper

Wash and scrub raw potatoes. Place on cookie sheet and make a slit with a sharp knife in each potato to release steam during the baking process. (If you don't, one might explode - Sonny always wanted that to happen, but getting exploded, cooked potato off the oven walls is no fun!)
Bake the potatoes in a 350º degree oven for about 30 minutes or until fork tender.
Remove sheeted potatoes from the oven and smash each one with the bottom of a metal or aluminum cup; try not to use real glass since the heat might cause it to break.
Drizzle each potato with olive oil or butter, then sprinkle with garlic - fresh garlic is best and then, parmesan cheese. Return to the oven for 10 more minutes. Remove from oven, place on platter and then sprinkle with fresh parsley or chives. These potatoes are great to serve with ham, fish or other main dishes that do not create drippings for gravy.

I know, another potato side dish, but we just love potatoes! We discovered this recipe on Pinterest, it was a very popular recipe in 2010. There are plenty of varieties of the Smashed Potato recipe, but we liked the garlic- parmesan version the best.
If you want to mix things up, try avocado oil and curry or turmeric. Both of these spices are good for you, so adding them to any recipe you can is a good thing.
You can also use pizza/Italian spices like rosemary, thyme and oregano, or Mexican spices like chili powder, cumin and garlic.
