1 package mushrooms
6 Tbsp. italian dressing (use light italian dressing for a healthier option)
1 shallot or other onion, minced
2 Bell peppers
½ lemon, juiced
Garlic Powder
Salt & Pepper
Cooking Spray

Directions:
Directions:
Bring a medium pot of water to a boil.
Cut the bell pepper into quarters and scoop out the seeds.
Add the peppers to the boiling water with some salt.
Boil for about 5 minutes to soften the peppers.

Preheat oven to 425º

While the peppers are boiling, finely chop the mushrooms into very small pieces.
Spray a pan with cooking spray over medium-high heat.
Add the onion/shallot and lemon juice. Cook until onion softens.
Add the mushrooms, salt, pepper, and garlic powder.
Once the mushroom start to soften add the Italian dressing.
Let simmer for about 5 minutes.

When the peppers are done, take them out of the boiling water and put them on the baking sheet, skin side down.
Sprinkle some salt and pepper on the peppers.
Spoon some of the mushroom mixture onto the pepper slices

Place peppers into the oven and bake for 10 minutes.
