1 large can of Las Plamas green enchilada sauce
¼ C Fresh Parsley
1 TBSP Lime juice
¼ C Fresh cilantro
2 cloves garlic
2 C chopped cooked chicken cubed
¾ C shredded mozzarella
8-10 flour tortillas

Directions:
Directions:
Preheat oven 350 degrees.
Spray 9x12 pan with cooking spray.
Add enchilada sauce, parsley, cilantro, garlic, lime juice in a blender for about 30 seconds. Remove ½ of mixture set aside. To remaining mixture add ¼ C cheese and chicken.
Spoon chicken mixture onto tortilla and roll, placing seam side down. Continue to roll each tortilla until pan is full. Them pour remaining sauce over top and sprinkle with cheese.

Cook for 35-45 minutes

This recipe is from a good friend and is a family favorite. It is often requested for the kids "birthday dinner", especially Josh! I always have to make extra!

Make these ahead and put in fridge, then bake when ready for dinner. WE like to serve with a salad and rice.
