1 1/2 Cups Butter (3 sticks) COLD, not softened
1 1/2 Cups Brown Sugar
1 tsp baking soda
1/2 tsp salt
2 cups flour
2 cups oats

1 cup chocolate chips (reserve for the center)
1 bottle of caramel topping (reserve for the center)
1/4 cup Flour (reserve for the center)

Directions:

Preheat Oven to 350º

Cream together butter and brown sugar.

Add salt, flour, and oats.
Divide into 2 equal parts

Grease a 9x13 greased pan.

Press 1/2 of the mixture into the bottom of the pan. Reserve the second half for later.
Bake for 15 minutes.
While crust bakes, mix 3/4 of Carmel with 1/4 cup flour.
Remove crust from oven.
Sprinkle 1 cup of chocolate chips over warm crust.
Then drizzle caramel mixture over chocolate chips and crust.
Take the second half of the crust and flatten in pieces and lay over the top of the pan. It will not lay perfectly. Do your best to fill in holes and gaps. The gaps will close when you bake.

Place in oven and bake for 18 more minutes or until top crust is fully baked.

Allow to Cool completely before cutting and serving.

This recipe is great to make ahead a few hours or even the day before and bring along to a group gathering or outdoor adventure.

We bring these to family picnics, parades, hikes, and church gatherings, and is popular and Collette's Thompson family reunions.

My family calls these "Bishop Bars" because when my Uncle was a bishop, their family would make on Saturday to share with guests that stopped by their home on Sundays to visit.
