Basic White Sauce Recipe

4 Tablespoons Butter
1 Teaspoon of Salt
4 Tablespoons Flour
1/2 Teaspoon of Pepper (White pepper is best)
2 Cups Milk

Directions:
Directions:
Mix flour, salt and pepper in a small cup and set aside. Melt Butter in a saucepan. Stir in flour mixture til all blended. Cook 1 minute then stir in milk. Lower to medium heat, bring to a boil, stirring constantly. Let boil about 1 minute or until sauce starts to thicken. Remove from heat. Sauce will continue to thicken as it cools.

Variations:

Biscuit Gravy: Cook bacon or sausage (or both). Omit butter and stir flour mix directly into drippings. Finish cooking as directed.

Cheesy Sauce for Mac and Cheese: Add two (2) cups of your favorite cheese after removing from heat. Stir until cheese is melted and blended.

Garlic Parmesan Sauce: Add 2 Tbsp of minced garlic as butter is melting and saute for a moment. Cook as directed. After removing from heat, stir in 8 oz (about 1 cup) of shredded Parmesan cheese.

SOS: when you pour in the milk, add any desired meat (chicken, ham, turkey, etc) leftovers from the fridge. Add any leftover vegetables or a can of drained peas. Serve over toast.
