2 lbs. red snapper fillets
¼ tsp. salt
⅛ tsp. pepper
2 garlic cloves, minced
1 Tbs. butter
3 Tbs. orange juice
1 tsp. orange peel

Orange Sauce:
1 garlic clove, minced
2 Tbs. butter
3 Tbs. orange juice
⅛ tsp. ground ginger
2 Tbs. minced fresh parsley

Directions:

1. Place the fish in a single layer in a 13x9x2 inch dish coated with non-stick cooking spray; sprinkle with salt and pepper. In a small saucepan over medium heat, cook the garlic in butter for 1 minute; pour over fish. Drizzle with orange juice; sprinkle with orange peel. Bake, uncovered, at 400º for 10-15 minutes or until fish flakes easily with a fork.
2. In a small saucepan over medium heat, cook garlic in butter for 2-3 minutes or until golden brown; discard garlic. Stir orange juice and ginger into butter; heat through. Cut fish into serving-size pieces; drizzle with orange sauce and sprinkle with parsley.
