Directions:Preheat oven to 400ºF. Pound chicken breasts to equal thickness -- about 1 to 1½ inches. In a medium bowl, pour garlic powder, salt, ground pepper, parsley, grated parmesan cheese and Asiago cheese. (There are no measurements for this -- I like to use a lot to get maximum flavors. For example, I use at least three cups of cheese)
Spray a glass baking dish with Pam or oil. Melt a whole stick of butter (for 8 breasts) or half a stick (for 4 breasts). Dip breasts into butter, then dip into the bowl with spices and cheese to coat. Place breasts into prepared baking dish. Pour any remaining ingredients on top of breasts.
Place breasts in oven and bake for 25 minutes. Check breasts. You are looking for a white, juicy center, or 175º inside. Depending on your oven and the number of breasts, it could take 30-40 minutes. The key is not to overcook; you want your chicken to be tender and juicy.
Enjoy with roasted broccoli or asparagus and mashed potatoes. Also a white wine. |

Notes: This is one of Alex's favorite meals. He gets so excited when I cook this. It was one Mom made and taught me how to make when I was at college at ECU. It is one that brings back fond memories and the feeling of being a young curious cook. Not sure what flavors go with what, or how long to cook something. However, with a Mom that doesn't use recipes -- just taste buds and a big heart, will create some of the most delicious meals. Hopefully you will feel this and enjoy this meal. Remember to always stay thankful for the opportunity you have to cook for your loved ones and the joy it brings.
