2 cups creamy peanut butter
2 cups sugar + more for rolling
2 large eggs
2 teaspoons baking soda
a pinch of salt
1 teaspoon vanilla

Preheat the over to 350 degrees.

Grease two cookie sheets or cover them with parchment paper.

Beat peanut butter and sugar in a medium bowl with an electric mixer until fluffy. Beat in the eggs and then the baking soda, salt, and vanilla.

Roll the dough into 1-inch balls, roll through sugar, and place them 2 inches apart on the cookie sheets. With the tines of a fork, press cross-hatches into the balls to flatten them.

Bake cookies, one sheet at a time, in the middle of the oven, for 10 minutes, or until they're puffy and golden brown.

Let them sit on the cookie sheet for a couple of minutes, then transfer to a wire rack to finish cooling.

These are great with chocolate kisses in them as well. Do not use a fork to flatten the balls, let them bake for about 8 minutes, pull the cookies out of the over and press a Hershey's kiss in the middle of each cookie. Then put the cookies back in the oven for the remaining 2 minutes of cook time.
