Ingredients:
Ingredients:
Strudel:
1 and 1/4 c. All-purpose flour
pinch of salt
1/4 tsp. cinnamon
3 tbsp. vegetable oil
1/3 c. water

Filling:
4 Fuji or Gala Apples
Juice of 1 lemon
1/3 c. sugar
1/2 tsp. cinnamon
1 c. chopped pecans
6 tbsp. butter, melted
1/4 cup dried cherries
1 tbsp. water

Directions:
Directions:
For Strudel: Whisk together dry ingredients. Drizzle in oil and water and mix until dough forms. Knead for 8-10 minutes. Cover in bowel with a towel, let sit for 30 minutes.

Filling: Peel and chop apples and mix with lemon juice, sugar, cinnamon, and salt. Let sit 5 minutes to release moisture. Microwave cherries in water 30 seconds to plump, then add to mixture.

Roll dough to size of a sheet of paper, then hand stretch it as thin and rectangular as it can be. It should be a little bigger than the baking sheet it will lay on.
Preheat the oven to 425ºF. Trim the sides of the dough to even. Use extra to braid onto top of strudel later.

Brush dough with butter, then sprinkle on pecans. Scoop apple mixture onto one side of the dough, then roll up and seal into a log. Place on parchment lined baking sheet. Brush with the remaining butter, then braid and attach extra dough in a pretty fashion.

Bake at 425º for 20 minutes, then lower to 350º for 30 minutes. Cool, then top with a sprinkle of sugar or cinnamon.
