2 lbs Chicken of choice (I use boneless chicken breast)
3/4 c. Uncooked Rice (white or brown)
1 c. Black Beans
1 can Unsalted Whole Corn Kernels
2 cans Diced Tomatoes with Green Chilies
1/2 jar of Mild Chunky Salsa of choice
4 tbsp. Taco Seasoning

Directions:
1. Cover the bottom of a crock pot in a shallow base of water. Add in the chicken of choice, and turn on high. The chicken can be frozen or thawed.
2. When the chicken begins to fall apart from cooking, add half the taco seasoning to the water and continue cooking.
3. After the chicken is falling apart and almost done, add in the uncooked rice and rest of the taco seasoning. Meanwhile, drain the beans and corn and add when rice starts to soften and puff.
4. Add the Diced Tomatoes with Green Chilies and Chunky salsa last to bring spice. It is finished when the rice is fully cooked.

Serve on chips, in shells, or by itself. Add a cheese of your choice. Be creative.
