32 oz. whipped cream cheese at room temperature
16 oz. sour cream at temperature
¼ lb. softened butter
2 tbsp. cornstarch
1 tsp. vanilla
1 tsp. pure lemon extract or juice
1 c. sugar
5 beaten eggs

Directions:
Cream together the whipped cream cheese, sour cream and butter. Then with an electric mixer, blend all the remaining ingredients into the cream cheese mixture except the eggs. Lightly grease 10 inch spring form pan. It will need to be placed into a water bath for baking. It should have approximately 1 inch of water surrounding the pan. I place aluminum foil surrounding the pan prior to placing it in the bath. Add remaining ingredients except the eggs. While mixing, add eggs one at a time. When mixed, pour into prepared spring form pan as described above. Bake at 375 for 1 hour or until the center is firm. Remove from oven. Let chill completely before placing in the refrigerator. You can top with your favorite fruit topping or serve plain.
