Ingredients: 1 lb shrimp any size, peeled and deveined 1½ Tbsp olive oil ½ lemon, juiced ¾ cup white wine, sweet not dry 3 tsp granulated garlic ¾ cup butter 3 tsps parsley, divided 2 tsps salt ¼ tsp pepper, as desired ¼ cup Parmesan Cheese (finely shredded)

Directions:Spray a shallow baking or casserole dish with cooking spray. Any shallow oven safe dish will work. Set aside. Peel and devein shrimp. Tails can be left on for presentation or removed if you wish. Arrange shrimp in a single layer. In a saute' pan over medium/high heat add the oil and garlic. Saute' garlic for 2-3 minutes until all garlic is absorbed by Olive Oil. Add the wine and lemon juice. Bring to a boil and then lower the heat and simmer. Reduce mixture until about half. Remove from heat and add butter, salt, pepper, 2 tsps parsley and Parmesan cheese. Ladle the liquid over the shrimp. Fill until shrimp are partially covered. (Remaining juice can be used to flavor pasta and/or vegetables). Sprinkle remaining parsley over shrimp. Place under a broiler until shrimp turn pink about 6-7 minutes. Time will depend on the size of shrimp. Remember shrimp will continue to cook when removed from oven. Serve immediately. |

Notes: Can be served alone or over pasta and vegetables. Shrimp is at it's best when served immediately. I like to get everything else in the meal ready leaving shrimp for last so it can be served right away.
