½ c. sugar
2 tbsp. cornstarch
2 c. milk
2 beaten egg yolks or 1 beaten egg
2 tbsp. butter
1½ tsp. vanilla

Directions:
Directions:
In a heavy saucepan combine sugar, cornstarch, and ¼ tsp. salt. Stir in milk. Cook and stir over medium heat till thickened and bubbly; cook and stir 2 minutes more. Remove from heat. Gradually stir about 1 cup of the hot mixture into egg yolks or egg.
Return all to mixture in saucepan. Cook and stir 2 minutes more. Remove from heat. Stir in butter and vanilla till butter melts. Pour into a bowl. Cover surface with clear plastic wrap. Chill.


Chocolate pudding: Prepare vanilla pudding as directed above, except increase sugar to ¾ cup, Chop 2 squares (2 oz.) unsweetened chocolate. Add with milk. Continue as directed.
