2 - 9 inch frozen pie shells (buy the shallow shells, not the deep dish variety)

1 lb mushrooms, cleaned and sliced
1 large onion, chopped
1/4 cup butter (1/2 stick)

3 eggs
1 1/2 cups half and half cream
1/2 cup parmesan cheese
salt and pepper to taste

Preheat oven to 400

Bake frozen pie shells at 400 for about 10 minutes until lightly golden.

Remove from oven to cool and turn oven down to 350

Saute mushrooms and onion in butter until onions are tender. Divide mixture evenly between the 2 pie shells.

Beat together the eggs and the cream for 2 minutes at medium speed. Add the parmesan cheese, salt and pepper and mix well. Divide mixture evenly between the 2 pie shells.

Bake in 350 oven for 40 - 45 minutes or until custard is set and top is golden.

This quiche freezes beautifully so yo can serve one and freeze the other. Just thaw and cook at 350 till warmed
