2 cup flour
1 tsp salt
¼ tsp pepper
1½ cup milk
4 eggs
3 tbsp melted butter
1 tbsp chopped fresh chives
2 tsps chopped fresh sage

Directions:
Directions:
Heat oven to 375º
In bowl with electric mixer beat eggs, melted butter and milk. Stir in the chives and sage.
In a another bowl mix flour, salt and pepper
With electric mixer on low speed, gradually add milk mixture to flour mixture, increase speed to medium and beat 3 minutes more, or until small bubbles rise to surface of batter.
Beating incorporates air into the batter, so the Yorkshires will be light and fluffy.
Evenly divide batter among 12 greased muffin cups.
Bake 25 minutes or until Yorkshires are puffed and golden brown.

Serve immediately ad the longer they sit, the faster they'll collapse!
