Orzo
1/4 cup olive oil plus extra for cooking
1/4 cup toasted pine nuts
2 cups arugula (torn)
1/2 cup basil
1/2 cup dried cherries or cranberries
3 Tbls lemon juice
Fresh ground salt and pepper
Crumbled feta cheese

Directions:
Directions:
Cook Orzo in salted water for 8 minutes. Drain and cool on baking sheet.

Toast 1/4 cup pine nuts in a dry pan

Put cooled orzo in a bowl and add 2 cups torn arugula, diced basil, dried fruit, lemon juice and toasted pine nuts - toss together. Then blend in 1/4 olive oil.

Salt and pepper to taste. Add crumbled feta cheese and serve.
