1 cup firmly packed brown sugar
1 cup margarine softened
1 egg
1 tsp vanilla extract
2 cups quick cooking oats
1½ cups flour
1 tsp baking soda
1 tsp pumpkin pie spice (1 tsp each of cinnamon, nutmeg and giner)
1 cup raisins

Directions:
Directions:
In large bow beat sugar, margarine until well mixed.
Beat in egg and vanilla until mixture is smooth.
Blend in oats, flour, baking soda and pumpkin pie spice and stir in raisins.

Drop batter by tablespoonfuls 2 inches apart on baking sheet lined with parchment paper.
Bake at 400º for 5 to 7 minutes or until lightly browned.
Remove from baking sheet and cool on racks.
Makes about 3 dozen.
