1 pkg (8 oz) brick cream cheese, softened
1 cup shredded white cheddar cheese
½ cup chopped dried cranberries (as much as you want)
½ cup chopped pistachios (as much as you want)

Directions:
Directions:
Mix cream cheese and cheddar cheese until blended. Add in a handful, or two, of cranberries and pistachios.
Roll cheese into an 8-inch log. Place additional cranberries and pistachios on parchment paper and roll cheese log into mixture until fully coated.
Refrigerate for at least 30 minutes.
