1 bag of shredded mozzarella cheese
16 oz package of sweet Italian ground sausage
4 medium zucchinis
5 oz bag of Mahatma yellow rice
sour cream
1 green or red pepper (optional)
1 small sweet onion (optional)

Directions:
Directions:
Cut zucchini in half lengthwise -- scoop out all pulp and squeeze to drain water.
Do not discard pulp. Brown the sausage and cook the rice. Optional: dice and saute peppers and onions.

Mix sausage, zucchini pulp and rice, as well as peppers and onions (if using.)

Fill each zucchini with this mixture and top with shredded cheese. Bake in oven at 350º for 10-20 minutes. Top with sour cream.
